High altitude baking is mostly a pressure issue, even though it shows up like a recipe issue. At elevation, gas expands faster, moisture evaporates sooner, and structure sets differently than at sea level. So a recipe that looks perfect in a cookbook can over-rise, crack, or dry out in Denver, Boulder, or Colorado Springs.
